Pandan Raisin Bread










Never thought of making this bread because raisins not a big fan of my family until I saw this recipe from Soh's blog....it looks so soft, aroma & yummy! Should give it a try and it turned out so pretty, even my daughter said like the one we used to see at store.

Recipe from Soh Pin Tee but I made a bit changes.

Ingredients:

300g bread flour
50g sugar
5g yeast
1 egg
A pinch of salt
100ml milk
20ml pandan juice
30g butter
3/4 cup of raisins

Direct methods :

Mix everything together until it turns a dough then only add in butter and knead it to become a smooth & elastic dough.
Rest the dough for 1st prove to double size.
Punch out and release the air of the dough and divide it into about 12 equal portions, leave it rests about 15 minutes.
Roll the individual dough with a wooden roller and spread some raisins on it then roll it up with your finger tips.
Rest the dough for final prove to double size.
Put into preheated oven 350°F for 18 minutes (temperature depend on individual oven).

Sweet Potato Bread








Sweet potato is always my favorite but I have not try it in making bread until I saw the recipe from Cass's blog, she was using pumpkin instead...!
Wow! The sweet potato bread's result turned out pretty soft and tasted good!

Recipe from Cass's blog but I make a bit changes

160g sweet potato (steam & mashed)
200g bread flour
80g whole wheat flour
1 whole egg
20g honey
40g milk
4g yeast
A pinch of salt
30g unsalted butter

Decorated with sun flower seeds (top & bottom).

Methods : Combined all the ingredients together and mix it to form a
dough then only add in butter and knead it to become a smooth
and elastic dough then follow by the usual making bread steps.

Steam Pau







I used to find something to do when I am free especially baking or cooking and my daughters use to say "why don't you resting instead of standing 4-5 hours in the kitchen...?" Cantonese say 'chin kuat tau' hahaha!
Today I made a very simple, easy and very nice Steam Pau with peanut filling and the recipe is from Alice Kitchen.

Ingredients: 300g plain flour, 50g sugar, 5g yeast, 5g baking powder,
3 g shortening, 125ml warm water

Methods :

Use 125ml warm water and 1 tsp of sugar mix with 5g yeast, set aside for 3 minutes.
In another bowl, mix flour, sugar, baking powder and shortening together then add in the yeast water and knead until a smooth and elastic dough. Set aside to prove to double size.
Punch out the dough and flatten it to release the air, divide the dough into 12 equal portion then fill up with the prepared peanut filling or any filling as you like.
Set aside to prove for another 40 minutes.
Steam at high heat for 7 minutes and done.

Golden White Toast








Running out of bread for breakfast tomorrow and I am tired of whole meal which I used to make...went to Cass blog saw this simple recipe, so I made it.
Surprisingly it is really good, thanks Cass for your recommended recipe.!

Recipe from Cass but I made some changes

Ingredients:

260g bread flour
40g plain flour
30g sugar
3 g yeast
1/2 tsp salt
20g butter
198g milk

Method as usual (mix everything together except butter)....




Steam Char Siew Pau (Whole meal)

After final rise, these pau are ready to go into steamer.



The pau are ready to eat after steaming for 7 minutes.






It's so soft and delicious...you should try it!

Recipe from Alice Kitchen but I make a little bit changes.

Ingredients:

150g plain flour
150g whole meal flour
70g sugar ( I used 50g brown sugar)
5g yeast
3 g shortening
130g water

Method:

Mix all the ingredients together and knead it become a smooth and elastic dough then cover and rest for double size.
Punch the air out of the dough then round it up again and leave for 15minutes
After 15 minutes, punch out the dough and round it up again for second prove to double size.
Divide the dough into 12-14 equal pieces, filling the dough and rest for another 20-30 minutes before put into the steamer.
Steam at high heat for about 7minutes and the pau are ready to eat.

Filling:

250g Char Siew (roasted pork)
1 tbsp soy sauce
1 tbsp oyster sauce
1 tsp dark soy sauce
1 tbsp sesame oil
1 tsp wine
100g water
1 tsp corn flour + 2 tsp water
2 gloves of garlic
1 small onion

Heat up the frying pan with oil, add in onion and garlic follow by the char siew and all the sauces, stir fry until everything well combined. Lastly add in the corn flour mixture, cook until it become thicken then set aside for later use.
