Steam Char Siew Pau (Whole meal)

After final rise, these pau are ready to go into steamer.



The pau are ready to eat after steaming for 7 minutes.






It's so soft and delicious...you should try it!

Recipe from Alice Kitchen but I make a little bit changes.

Ingredients:

150g plain flour
150g whole meal flour
70g sugar ( I used 50g brown sugar)
5g yeast
3 g shortening
130g water

Method:

Mix all the ingredients together and knead it become a smooth and elastic dough then cover and rest for double size.
Punch the air out of the dough then round it up again and leave for 15minutes
After 15 minutes, punch out the dough and round it up again for second prove to double size.
Divide the dough into 12-14 equal pieces, filling the dough and rest for another 20-30 minutes before put into the steamer.
Steam at high heat for about 7minutes and the pau are ready to eat.

Filling:

250g Char Siew (roasted pork)
1 tbsp soy sauce
1 tbsp oyster sauce
1 tsp dark soy sauce
1 tbsp sesame oil
1 tsp wine
100g water
1 tsp corn flour + 2 tsp water
2 gloves of garlic
1 small onion

Heat up the frying pan with oil, add in onion and garlic follow by the char siew and all the sauces, stir fry until everything well combined. Lastly add in the corn flour mixture, cook until it become thicken then set aside for later use.
